Local beyond borders
The partnership between Le Moulin des Cèdres and Red Hen Baking Company started in 2015 when Randy first visited our farm in Québec.
A mill processing organic white flour from locally grown wheat less than 150 miles from the bakery was a good opportunity for the team at Red Hen who is always looking for new ways to implement their farm to table philosophy with minimal impact on the environment.
Ten years (and hundreds of thousands delicious breads) later, as business relations evolved into friendships, we are extremely proud of the special bound based on shared values that is now established between our two companies.

Our Organic All-Purpose Flour

To celebrate the 10 years anniversary of our partnership, we are happy to present our organic all-purpose flour to Vermont's home bakers.
Born from a collaboration between organic farmers, an artisanal mill and your local baker, it was sustainably produced by people who believe that all great food starts with the best ingredients.
This white, unbleached and unenriched flour is made from a mix of Walton hard red spring wheat and Redeemer winter wheat. With its 12% protein content, it can be used for all of your everyday recipes as well as to bake delicious bread at home.

Along the St-Lawrence river in Quebec, the team at Les Fermes Longprés grows 1 500 acres of wheat, corn and soybean.
Recognized as pioneers in organic agriculture, they ensure a rigorous monitoring of their soil's health while respecting ecosystems and promoting sustainable and ethical farming practices.

Le Moulin des Cèdres was created in 2013 in order to process the wheat grown in Les Fermes Longprés and by neighboring farms.
Combining artisanal approach and modern quality control techniques, the team makes sure that each batch of milled flour lives up to your expectations as well as your values.

For more than 25 years, the bakers at Red Hen have been providing Vermonters with a variety of high quality artisanal breads.
In order to do so, they have been using this same Organic All-Purpose Flour that they now distribute themselves in several grocery stores across the state.
